This vegan spicy peach salsa recipe offers both the heat and sweet, not to mention a gorgeous combination of colors. I love eating this with tortilla chips, or as a topping for my Beyond Meat burger! This recipe is best with peaches at the peak of their ripeness. If you have less ripe fruit, making this salsa a day in advance will give the peaches a chance to soften. You can also create a milder onion flavor by soaking your onion in water for about 15 minutes prior to use. Combine all ingredients in a glass bowl and stir to combine. (Start with a very small amount of jalapeno pepper and taste before adding more). Season with salt and pepper.
