Vegan Stuffed Papaya

This healthy breakfast is loaded with all of your favorite powerhouse fruits. I love to use my Nutiva Superseed Blend (aff link) , but chia seeds work just fine too.

Ingredients

  • 2 very ripe papayas
  • 3 c. coconut yogurt
  • 3 T. Nutiva Superseed Blend (aff link) or chia seeds
  • 1 c. blueberries
  • ½ c. raspberries
  • ½ c. blackberries
  • ½ c. coconut flakes, unsweetened and lightly toasted
  • Mint or basil sprigs, for garnish

Instructions

Slice each papaya in half lengthwise. Scoop out the seeds with a large spoon and discard.

Combine the yogurt and chia seeds in a small bowl and stir to combine.

Divide the coconut yogurt mixture equally between the papaya halves and top with the blueberries, raspberries, blackberries, and toasted coconut flakes.

Garnish with a sprig of fresh mint or basil and serve immediately. Enjoy!
