This vegan mango smoothie recipe is quick and easy. I use the tropical flavors of coconut, mango, and pineapple. It is refreshing in the morning, or as an afternoon pick me up.

Ingredients

  • 8 oz. coconut water
  • 2 t. fresh ginger root, finely grated
  • ¾ c. frozen mango chunks
  • ¾ frozen pineapple chunks
  • 2 large stalks celery, cut into chunks
  • 1/3 medium cucumber, peeled and cut into chunks
  • 3 T. fresh lime juice
  • 5-6 ice cubes

Instructions

Add all ingredients to high-powered blender and turn on to its lowest setting. Gradually increase the speed and continue blending until all ingredients are blended smooth.

Pour smoothies into chilled glasses and serve immediately. Enjoy!
