In a large pot, heat olive oil over medium heat. Add onion and garlic and sauté for 3 minutes, or until translucent. Add carrots and cook until soft, stirring occasionally. Gently stir in veggie stock, lentils, tomato paste, Bac'n Bits, and Herbs de Provence. Bring to a boil, then reduce to a simmer. Cover and cook for 30 minutes. Remove from stove and stir in Gravy Master and red wine vinegar. Season with salt and pepper, and enjoy!Hearty Vegan Lentil Soup
