Vegan cauliflower mashed "potatoes" are a delicious and healthy alternative to traditional mashed potatoes. Instead of using potatoes, this recipe calls for cauliflower, which is lower in carbohydrates and calories and provides a variety of vitamins and minerals.

Serve the vegan cauliflower mashed "potatoes" hot and garnish with some chopped fresh herbs or a sprinkle of paprika. This dish is a great side dish to accompany any main course, and it's perfect for those following a vegan, vegetarian, or low-carb diet.

Ingredients

  • 1 medium cauliflower head, cut into florets
  • 3 T of vegan butter OR 2 T. extra virgin olive oil
  • 2 T. unsweetened almond milk
  • 1.5 t. garlic powder
  • 3 T. fresh chives, chopped
  • Sea salt and black pepper, to taste

Instructions

Cutting a head of cauliflower into florets and boiling them until they are tender (discard the main stalk.)

Drain the water and add the cooked cauliflower to a food processor or blender, along with the vegan butter (or olive oil), almond milk, garlic powder, salt, and pepper.

Blend the ingredients until they are smooth and creamy, adding more almond milk as needed to achieve the desired consistency.

Transfer to a serving dish and top with chopped, fresh chives. enjoy!
