Ingredients

  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 large fennel bulb, chopped
  • 6-7 medium tomatoes, chopped
  • 4 cups vegetable broth

  • Salt and black pepper, to taste
  • 1/2 c. full fat coconut milk
  • 2 tbsp olive oil

Instructions

Heat the olive oil in a large pot over medium-high heat.

Add the onions, garlic, and fennel to the pot and sauté for 5-7 minutes or until the vegetables are tender and fragrant.

Add the chopped tomatoes, vegetable broth, thyme, basil, salt, and black pepper to the pot.

Stir well to combine all the ingredients and bring the mixture to a boil.

Reduce the heat to low and let the soup simmer for 20-30 minutes or until the tomatoes are soft and the flavors have melded together.

Remove the pot from heat and let it cool for a few minutes.
