This vegan multi-color roasted carrots recipe makes a side dish so beautiful, it instantly upgrades your main course. These sweet and tasty carrots appeal to the kids and adults in my family alike!

Ingredients

  • 1½ lbs. carrots in colors purple, white, and orange, washed and patted dry
  • 2 T. olive oil
  • 2 t. kosher salt
  • 3 T. fresh thyme, stems removed

Instructions

Preheat oven to 400°F and line a large, rimmed baking sheet with parchment paper or a baking mat. I love my Silpat mat! (aff link)

Place carrots on the prepared baking sheet and drizzle with olive oil. Gently toss with your hands to evenly coat carrots with the oil. Sprinkle with salt and fresh thyme leaves. Toss to combine.

Place baking tray in pre-heated oven and roast for approximately 15-20 minutes. Remove from oven and turn each carrot to expose the bottom side. Return to oven and roast another 5-10 minutes or until they start to brown.

Remove from oven and serve immediately. Enjoy!
