Cauliflower has great texture and mild flavor, that perfectly complements the hummus in this bowl. Even those who don't usually enjoy cauliflower will enjoy this super nutritious dish!

Ingredients

  • 1 large cauliflower head, broken into smaller florets
  • 1 t. curry powder
  • ½ t. ground cumin
  • ½ t. smoked paprika
  • 2 T. olive oil
  • Sea salt and black pepper, to taste
  • 2 c. hummus (homemade or store-bought)
  • 2 c. red cabbage, thinly sliced
  • 1 medium cucumber, thinly sliced
  • 2 radishes, thinly sliced
  • ½ c. pickled red onions (or fresh red onion)
  • 1 c. fresh parsley, chopped
  • Pita bread or crackers for dipping

Instructions

Preheat the oven to 400°F.

In a large bowl, toss cauliflower florets with curry powder, ground cumin, smoked paprika, olive oil, salt and black pepper, to taste.

Arrange florets on the prepared baking sheet (for easy clean-up, line a large rimmed baking sheet with a piece of parchment paper.)

Place in the oven to roast until fork-tender and crispy around the edges, 20-25 minutes.

Place a large dollop of hummus in the bottom of each serving plate. Follow with roasted cauliflower, red cabbage, cucumber slices, radishes, and pickled red onions.

Garnish with fresh parsley. Serve with pita bread or crackers for dipping. Enjoy!
