Ingredients

  • 3 T. Olive Oil
  • 2 tablespoons vegan bac'n bits (ex: McCormick)
  • 1 large red onion, chopped
  • 3 carrots, peeled, sliced into "coins", then sliced in half
  • 3 garlic cloves, minced
  • 2 T. tomato paste
  • 1 T. Herbs de Provence
  • 1 1/2 c. lentils, rinsed
  • 3 1/2 c. veggie stock
  • 1 T. red wine vinegar
  • 1 T. Gravy Master
  • Salt and pepper

Instructions

In a large pot, heat olive oil over medium heat. Add onion and garlic and sauté for 3 minutes, or until translucent. Add carrots and cook until soft, stirring occasionally.

Gently stir in veggie stock, lentils, tomato paste, Bac'n Bits, and Herbs de Provence. Bring to a boil, then reduce to a simmer. Cover and cook for 30 minutes.

Remove from stove and stir in Gravy Master and red wine vinegar. Season with salt and pepper, and enjoy!
