Vegetarian Sloppy Janes Recipe

Quick and easy, plus no animals were harmed in the making of this alternative to the Sloppy Joe! These Sloppy Janes use fiber and protein rich beans, and fill you up fast. I like to serve these with a big salad and french fries. This was one of my favorite affordable dinners to cook when I was a broke college kid way back when. I still make it to this day, and Sophia loves it – the sweetness of the BBQ sauce makes her forget she is eating a nutritious dinner.

This recipe serves 6, and takes 30 minutes to prepare.

Here’s what you need:

  • 1 tablespoon vegetable oil
  • 3/4 cup chopped onion
  • 1 yellow bell pepper, chopped
  • 3 cups cooked brown rice
  • 2 (16 oz) cans Mexican style pinto beans
  • 3/4 cup your favorite BBQ sauce
  • 6 whole grain hamburger buns, lightly toasted

Here’s what you do:

  • Heat oil in large skillet, and saute onion and yellow pepper for about 2 minutes.
  • Add rice, beans and barbecue sauce. Simmer 10 to 15 minutes, until heated through.
  • Serve on toasted buns.
